l'olivierThe olive tree is a very old tree that domestication occurred between 3800 and 3200 BC. Its longevity is legendary. The oldest olive tree in the world would have about 3000 years and would be in the village of Vouves in the West of crete.

Those of the Mas des Oliviers have at least 150 years.

Olive produced naturally only a year on two in the absence of size. Also, every year, we make a fruiting size and all 4 or 5 years a size of regeneration. The size is generally in February.
Flowering takes place early June and lasts 7 days. The fruits appear in the 2nd June.
The maturation takes place in November-December. Generally, we start harvesting end of October. It may last until end of December according to the harvest.

We bring olives to the mill of the Loube, 2 km away, where they are crushed.

Yields are relatively low and range from 10% at the beginning of harvesting to 15 to 18% at the end of harvest, which means that it takes 6 to 10 kg of olives to get a liter of cold pressed olive oil.

Our production varies between 20 and 50 years.
